1/2 very ripe banana

INSTRUCTIONS
Mash the banana in a small bowl and mix in oil and vanilla extract.
Put the flour, sugar (if using), baking powder and salt in a small espresso mug. Blend thoroughly with a fork.

Microwave 90 seconds then let it cool about 1 minute before eating. If making a double batch in a large mug, cook 2 minutes.

1/2 cup / 60 g ground flaxseed / flax meal

3 eggs large

3 egg whites large

5 tbsp olive oil

2 tsp baking powder

4.7 oz / 140 ml / water (10 tbsp)

INSTRUCTIONS

Preheat the oven to 180 Celsius / 356 Fahrenheit.
Whisk the eggs and egg whites with an electric mixer or in a food processor until foamy.
Add the rest of the ingredients and blend until you have a smooth dough.
Let the dough sit for a few minutes so the coconut flour and flax can absorb the moisture.
Pour the mix into a well-oiled pan (alternatively, line a pan with baking paper) and bake at 180 Celsius / 356 Fahrenheit for 35 minutes or until browned on top. It”s ready when a knife inserted comes out clean.
If you prefer to bake as a loaf, increase the time in the oven by 10 minutes.
I baked my bread Focaccia-style in a 25×15 cm casserole dish. Next time, I will line it with baking paper to be able to take it out easier.
When you make flaxseed muffins with this recipe, the oven time will probably have to be reduced. My guess would be 25-30 minutes.

    INGREDIENTS
    1 lb New Zealand spring rack of lamb, fat trimmed and frenched
    salt and pepper
    for the marinade:
    3 cloves garlic, crushed
    2 tbsp dijon mustard
    2 tbsp balsamic vinegar
    1 tsp agave nectar, or sugar
    1 tbsp fresh rosemary
    2 tbsp fresh chopped parsley
    for the spinach:
    3 cloves smashed garlic
    1 tsp olive oil
    10 oz baby spinach, washed
    salt and fresh pepper
    INSTRUCTIONS
    Combine all ingredients for marinade.
    Season lamb with salt and pepper. Lay lamb chops in a bowl, add marinade and let it marinate 20 minutes or refrigerate a few hours or overnight.
    Remove lamb from refrigerator if marinated overnight before cooking so that the meat comes back to room temperature.
    Preheat oven to 450°.
    Roast lamb in the center of the oven for about 12 – 18 minutes for medium rare, or until the internal temperature is 130° – 135°.
