Whipped Ricotta Toast with Roasted Tomatoes on crusty bread and topped with garlicky tomatoes, shallots, and basil is the perfect way to enjoy fresh summer tomatoes.
INGREDIENTS
1 medium head garlic
3 teaspoons olive oil
Kosher salt
Freshly ground black pepper
1 dry pint grape tomatoes, halved
1 medium shallot, cut into ¼-inch slices
8- ounces French baguette
Olive oil spray
1 cup part skim milk ricotta
¼ cup chopped basil, for garnish
Crushed red pepper flakes, for garnish (optional)
INSTRUCTIONS
Preheat oven to 400 degrees F.
Cut just the top of the head of garlic off, leaving cloves intact and exposed. Drizzle with 1 teaspoon oil, wrap tightly in aluminum foil, place on medium sheet pan and roast for 25 minutes.
In a medium bowl, combine the tomatoes, shallots, remaining 2 teaspoons oil, ½ teaspoon salt and pepper, to taste. Toss to coat. Transfer to a sheet pan lined with parchment.
After garlic has roasted for 25 minutes, leave it in the oven then add the sheet pan with the tomatoes and shallots and roast for 20 minutes.
Meanwhile, cut bread into 20 (½-inch) slices.
Remove both sheet pans from the oven. Turn the oven off, take wrapped garlic off sheet pan and allow to cool for 5 minutes.
Lay bread slices in an even layer on the sheet pan, spray lightly with olive oil and place the sheet pan in the oven to allow bread to toast while you whip the ricotta.
Unwrap the garlic and carefully squeeze or scoop cloves into a food processor fitted with metal blade. Add the ricotta, ¼ teaspoon salt and pepper, to taste then process for 30 seconds. Scrap sides with a spatula and pulse 2-3 times to thoroughly combine.
Remove bread from oven and assemble toast.
To assemble toast:
Scoop 1 tablespoon of whipped ricotta onto each piece of bread. Evenly distribute tomatoes and shallots on to toasts.
Top each with basil, a pinch of salt and red pepper flakes, if using. Serve immediately.

Scallops are great for a quick meal any night of the week and are a real treat. They can be quickly sautéed, then added to salads like this Scallop and Baby Green Citrus Mojo Salad, and this delicious Scallop and Grapefruit Salad, but once in a while when I want something more substantial, I love it with pasta. Here I tossed it with some pasta and peas, for a dinner that took less than 15 minutes to make.
INGREDIENTS
4 oz linguini, whole wheat or low carb
1 cup frozen peas
2 tbsp chopped parsley
1 tsp extra virgin oil
1 tesp butter
6 large sea scallops, cleaned
course salt
ground pepper
INSTRUCTIONS
Cook pasta in a medium pot of boiling salted water until al dente, according to package instructions adding the peas to the boiling pasta water 4 minutes before finished.
Reserve 1/2 cup of pasta water before draining, drain the pasta and return to pot.
Add parsley and 1 teaspoon of olive oil. Stir, adding reserved pasta water a little at a time. Adjust salt and pepper, to taste.
Meanwhile while the pasta is cooking, season the scallops with salt and pepper.
In a large skillet, heat butter over medium flame. Cook scallops until browned on one side, 2 to 3 minutes.
Flip; cook until opaque throughout, about 30 to 60 seconds more, while their centers are still slightly translucent (you can check this
by viewing them from the side). Be careful not to overcook or they will become tough.
Serve over pasta.

I”m a little obsessed with this salmon (my favorite fish!). It’s perfectly charred on the edges with crisp skin and the sweet miso marinade is to die for!
INGREDIENTS
1 pound wild salmon, skin-on, cut into 4 equal portions
1/4 cup white miso, available at amazon, or Asian, gourmet markets
1/2 cup mirin
2 garlic cloves, crushed
1 teaspoon grated ginger
1 scallion, green parts only, thinly sliced
INSTRUCTIONS
In a small bowl, combine miso, mirin, garlic and ginger.
Pour 1/4 of the marinade in a shallow dish or glass pie plate, place fish flesh-side down, and top with remaining marinade.  Place in refrigerator and allow to marinade at least 6 hours or up to overnight.
Remove from refrigerator 30 minutes before cooking. Preheat oven to broil high.
Transfer fish to a sheet pan lined with foil. Discard excess marinade.
Place fish on the second rack from the top and broil 6-7 minutes, or until fish flakes easily with a fork.
If you wish to serve the fish without the skin, carefully slide a fish spatula between the skin and flesh.
Top with scallions and serve.

Ingredients
1 pound 93% lean ground turkey
1 tablespoon olive oil
1 teaspoon minced garlic
1 cup chopped onion
1 can 28 ounces crushed tomatoes
1 can 15.5 ounces black beans, drained, rinsed
1 can 15.5 ounces pinto beans, drained, rinsed
1 cup mild salsa
2 cans 10 ounces diced tomatoes with green chili”s
1 tablespoon taco seasoning
1 teaspoon cumin
1 teaspoon dried oregano

1-2 cups water to thin out to liking

Instructions

Add all remaining ingredients into crock pot.
Cook on low 4 hour- 6 hours.
Use water to thin out soup if desired.
Add optional toppings and enjoy!

Shrimp Scampi Zoodles for Two, a delicious garlic shrimp and lemon dish over zucchini noodles is an EASY low-carb dish that takes less than 20 minutes! It”s also gluten-free, paleo, Whole30 and keto!
INGREDIENTS
2 medium zucchini, about 7 oz each
1/2 tbsp unsalted butter, or olive oil for Whole30
2 tsp extra virgin olive oil, divided
4 minced garlic cloves, divided
12 large peeled and deveined shrimp, about 6.5 oz
kosher salt, to taste
freshly ground black pepper
1 tbsp chopped fresh parsley leaves
1/2 tsp fresh grated lemon zest
3 tbsp freshly squeezed lemon juice, from 1 lemon
1/8 tsp hot red pepper flakes
INSTRUCTIONS
Use a mandolin fitted with a julienne blade or a spiralizer to cut the zucchini into noodles. Cut the strips into 6 to 8-inch strips.
In a large nonstick pan, melt the butter and 1 teaspoon olive oil over medium heat. Add the garlic and saute for 1 minute. Add the shrimp, kosher salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Set aside.
Add the remaining oil and garlic to the skillet, cook 30 seconds then add the zucchini noodles, kosher salt and pepper. Cook 2 minutes, stirring.
Remove from the heat, add the shrimp, parsley, lemon zest, lemon juice, and red pepper flakes. Toss well to combine and serve immediately.
Makes 2 servings. 6 shrimp, half the noodles.

INGREDIENTS

1 large cauliflower, in florets 300g / 10.5 oz

1 cup / 240g heavy cream (double cream)

1/4 cup / 60 ml almond milk unsweetened


1 tsp vanilla extract

3 egg yolks large

1 tsp arrowroot powder or 1/4 tsp xanthan gum

1/4 cup / 40g golden Lakanto

1 tbsp / 15g butter + some for the dish

1 tbsp lemon zest from roughly 1 lemon
INSTRUCTIONS

Pulse the cauliflower florets in a food processor and pulse until chunky. Place in a glass bowl, cover and microwave for 3 – 4 minutes. Squeeze out the water using a muslin cloth or fine tea towel. Place in a bowl and fluff with a fork.
Preheat the oven to 150C/300F and butter a 10 x 8 x 2 inch baking dish. (You can use smaller if you prefer.).
Place the cream, almond milk, half the nutmeg and vanilla in a pan and heat until hot, but not boiling. About 2 minutes.
Mix the egg yolks, arrowroot (or xanthan gum) and 3 tbsp of sweetener together in a bowl using a hand balloon whisk. Add a little of the hot milk and whisk again to combine. Add the rest of the cream mix slowly, whisking continuously. Place back on the hob to thicken. About 2.5 minutes. Stir through the cauliflower rice.
Place in a baking dish and sprinkle with the remaining nutmeg/ cinnamon, 1 tbsp of golden Lakanto and lemon zest and dot with butter.
Cook for 15 minutes until golden on top.
Net Carbs: 3.8g per portion, 6 servings, 120g each
For a speedier version, skip the oven step. Simply keep the pudding on the stove for a further few minutes, then stir through the butter and serve with 1 tbsp of golden Lakanto and the rest of the nutmeg or cinnamon plus lemon zest.
Storage: Tupperware in the fridge for up to 3 days
