Preheat grill to medium-high heat or the oven to 425F.
Cut four large 18 x 12-inch pieces of foil and layout on a flat surface.
Place 3/4 cup frozen mixed veggies in the center of each piece of foil.
Season chicken with salt, garlic powder and paprika. Brush both sides of the chicken with 1/4 cup BBQ sauce and place 2 pieces (1 drumstick, 1 thigh) in the middle of each foil packet.
Bring up the long sides of the foil, so the ends meet over the food. Double fold the ends, leaving room for heat to circulate inside. Double fold the two short ends to seal the packet tight, so no steam escapes.
To Grill the Foil Packets:
Place foil packets onto a preheated grill over medium-high heat and grill, covered over indirect heat for 50 to 55 minutes or until chicken is cooked through and chicken reaches an internal temp of 160F when tested with an instant read thermometer.
Remove from the grill and carefully open the foil packets. Brush chicken with reserved BBQ sauce and cook uncovered 5 minutes more. Garnish with fresh parsley if desired.
Bake Foil Packets in the Oven:
Preheat oven to 425F.
Place foil packets on a baking sheet and bake 50 to 55 minutes or until chicken is cooked through and tender and reaches an internal temp of 160F with an instant read thermometer.
Remove baking sheet from oven. Carefully open foil and brush the chicken with remaining BBQ sauce, bake 5 minutes uncovered and garnish with fresh parsley if desired.

INGREDIENTS
For the Seasoning:
1 teaspoon kosher salt
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon thyme
1/2 teaspoon sugar, omit for Paleo and Whole 30
1/8 teaspoon black pepper
1 clove crushed garlic
3 tablespoons olive oil
2 tablespoons red wine vinegar
For the sheetpan:

8 4 oz each boneless skinless chicken thighs, trimmed of fat
1/2 tsp kosher salt
12 ounces zucchini, diced into 1-inch pieces
3 carrots, peeled and diced into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
chopped parsley for garnish
INSTRUCTIONS
Preheat oven to 450F degrees. Spray 2 large nonstick sheetpans with oil or use parchment or foil for easy cleanup.  Arrange the center rack and lower third.
Combine the Italian seasoning ingredients in a large bowl. Season chicken with 1/2 teaspoon salt, then add the chicken, zucchini, carrots, bell peppers and red onion to the bowl and toss well to coat. Marinate 30 minutes or as long as overnight.
Arrange everything onto the prepared baking sheets spread out into a single layer. The vegetables and chicken should not touch. Bake about 20 minutes, turn chicken and vegetables and bake an additional 10 minutes, until roasted and tender. Top with fresh parsley and serve.
NOTES

Let the cooked dish cool completely.
Portion it into freezer containers and freeze for up to 3 months.
To serve, thaw in the refrigerator overnight.
Reheat in a 325°F oven until warmed through 20 minutes.

Brussels Sprouts Gratin are roasted until crisp, then topped with a light cheese sauce made with Gruyere and Parmesan – the perfect Holiday dish!
INGREDIENTS
16 oz brussels sprouts, trimmed of outer leaves and sliced in half
1/4 tsp kosher salt
black pepper, to taste
olive oil spray
1/2 tbsp butter
1/3 cup chopped shallots
2 tsp all purpose flour, or gluten free flour for GF
3/4 cup fat free milk
1/4 tsp kosher salt
1 tsp fresh thyme
1 tbsp grated parmesan cheese
2 oz grated Gruyere cheese, divided
INSTRUCTIONS
Preheat oven to 400°F. Spray an 8″x12″ gratin dish or casserole with olive oil. Add the brussels sprouts and season with salt and pepper. Spray more olive oil over the brussels and place in the lower third of the oven. Bake 15 minutes, toss and bake an additional 10 minutes.
Meanwhile, heat a medium nonstick pan over medium heat. Add butter and let it melt, add the shallots and cook until softened, about 4 to 5 minutes.  Sprinkle the flour over the shallots to make a roux, whisking for 1 to 2 minutes. Add the milk and stir with a wooden spoon until the roux is incorporated into the milk. Cook over medium-low heat for about 4 minutes, stirring, until the sauce thickens. Add fresh thyme, parmesan and half of the grated Gruyere cheese into the white sauce and stir until the cheese is melted and incorporated into the sauce.
Pour over the brussels sprouts, and top with the remaining cheese. Bake for 15 minutes until top is lightly browned and bubbly.

Slow Cooker Tahini Chicken Thighs

Ingredients
8 boneless, skinless chicken thighs about 1.5 lbs
1/4 cup tahini
3 tbsp extra virgin olive oil divided
3 tbsp water
2 tsp lemon zest
2 tbsp lemon juice
2 cloves garlic minced
1 shallot grated
1/2 tsp salt
Instructions

Pour 1 tablespoon of oil into the slow cooker then lay the chicken thighs in. Sprinkle with salt and pepper.

Whisk the tahini, the remaining oil and remaining ingredients together and pour over the chicken thighs.

Cook on high 4 hours or low 8 hours.

Sprinkle with fresh chopped parsley if desired.
