How To Make Chicken Enchiladas With Black Beans

  • 12 corn tortillas

    1 cup chicken stock

    2 tablespoons flour

    2 tablespoons butter

    1 teaspoon chili powder

    1/2 teaspoon ground cumin

    1/4 cup chopped onion

    1/4 cup chopped green bell pepper

    1/4 cup chopped purple bell pepper

    Instructions

    To Make the Enchiladas:

    1. Preheat oven to 375 levels F (190 levels C). Grease a 9×13-inch baking dish.

    2. Cook the chicken in a big skillet over medium warmth till cooked through. Remove from heat and shred the chicken.

    3. Stir collectively the shredded chicken, black beans, corn, and salsa in a large bowl. Season with salt and pepper to taste.
